Ingredients

Get your scales out, this one’s got a bit of measuring. The only ‘weird thing’ int his recipe is dissolving your sugar in water first.

Plain flour
180 grams

Cocoa powder
25 grams

Bi-carb/Baking soda
5 grams

Salt
2 grams

White Sugar
200 grams

Water
240 ml

Vanilla extract
15ml

Vinegar
15ml

Oil (Coconut, canola, light olive)
80ml

Step 1

Preheat oven to 170c and grease up a 20cm springform pan with butter.

Step 2

Chuck the plain flour, cocoa, bi-carb soda and salt into a bowl give it a stir and make sure you SIFT IT 4 TIMES

Step 3

Into a decent jug, put your water, sugar, oil, vinegar and vanilla then stir it to dissolve as much of the sugar as you can, no stress if there’s a little left over.

Step 4

Pour your mix into the prepared cake pan and pop it in the oven for 40-60 minutes. (depends on your pan and oven)

At about 40 mins you can do a quick skewer test and if it’s clean your cake is done, otherwise go for 10-15 more minutes.

Step 5

Pop it on a cooling rack, and go make some icing.
