Ingredients

Get your scales out, this one’s got a bit of measuring. The only ‘weird thing’ int his recipe is No-Egg, a staple for those with allergies but easy to get at Coles (Not Woolies) if you want a quick way to replace egg in baked goods. Just chuck the powder in with the flour and you’re good to go.

Plain flour

Bi-carb soda

1.5 teaspoons

100 grams

Butter
170 grams

Step 1

Chuck the plain flour, bi-Carb soda, corn flour and No-Egg into the bowl of your mixer and give it a quick mix with a spoon.

Step 2

Pop the butter in a heat proof bowl, and microwave in ten second bursts until it’s super soft but not melted.

Step 3

Into the bowl with the butter, add all the sugar and vanilla extract and mix it until there are no lumps.

Step 4

Add the bowl of buttery sugar to the bi-carby flour and mix until you have a nice soft dough.

Dump in all the chocolate chips and give it one more quick mix until the chips are evenly distributed in the dough.

Step 5

Get some glad wrap, and wrap up your dough.

Put it in the freezer for 20 mins.

Pre-heat the oven to 160°C

Step 6

Measure out 50g of dough and roll into a ball.

Put the dough balls onto a baking-paper lined cooking tray.

Bake the cookies for 12-14 minutes and cool on the tray for 5 mins before transferring to a cooling rack.
